By eight the footpath has people in it, and the ones who wanted a roast have already been. If you need two kilos of mince or a piece for Sunday, come before ten with a note, or just say it. I’ll wrap it and put your name on the paper in pencil. If you aren’t back by noon I put it back in the window for someone who is.

I tried a list you could tick. People ticked it and didn’t come, and I had mince sitting in the cold room with nobody’s name on it. The slip is a piece of paper from the pad by the scales. That’s the whole system.

The rosemary sausages go first. If they’re what you wanted and they’re gone, I won’t pretend I can make another tray while you’re standing there.
